On the menu, a Calimocho is a simple mix of red wine and classic cola. In real life, it is wine and soda sneaking out of their lanes to hang out in the same glass. Wine shows up with all its rich, grown up energy. Cola cannonballs in with caramelized fizz and noisy refreshment. Together they turn into something you have somehow never had before. Familiar, but flipped. Light and wildly drinkable, with real depth behind it. It’s what we’re not supposed to do, which is probably why it tastes so good!
